ITS FRIDAY AND WE'RE HALF WAY THROUGH OUR WEEK AWAY AT TORRISDALE CASTLE. THE RAIN IS POURING AND NIALL AND EMMA MACALISTER HALL, TECHNICALLY OUR HOSTS AS WELL AS DIRECTORS OF BEINN AN TUIRC distillery, HAVE INVITED US DOWN TO SEE THE DISTILLERY. A short knock and Su, head distiller, lets us in. what greets us is the shining beauty of a german manufactured still, Big don, aptly named after niall's father.
raymond, the assistant distiller, is busy hand bottling the latest batch and su wastes no time in showing us around and how this astounding gin is made. The gin is distilled using 12 botanicals most notably Icelandic moss and sheeps sorrel, both of which grow naturally on the estate, all sustainably sourced. This is central to the beinn an tuirc philosophy. In fact the entire gin production is powered solely & sustainably by the on site hydro-electric scheme. The water used in the production process is fed from the on site spring & a tree planting scheme is expected to go live once the new visitor centre is ready.
